A great way to start your morning is a big, healthy breakfast. It fills you up for the day and gives you energy to conquer the day the best you can. I love having vegan breakfasts because they are so filling and make me feel so good for the rest of the day. Here are 3 easy and quick vegan breakfasts!

– Vegan Pancakes –


1/2 all purpose/plain flour

2 tbsp brown sugar

1/2 tsp baking powder

1/2 soy milk


1. Place dry ingredients into a bowl, followed by the milk, and whisk the ingredients well to complete the batter.

2. Heat a good non-stick pan over medium heat.

3. Pour the desired quantity of the batter into the hot pan. When bubbles appear on the surface and begin to break (about 1 minute), turn the pancake over and cook the other side for about 30 seconds

4. Repeat the process until you run out of batter and enjoy!


Makes: 1-2 servings – 6 pancakes

Preparation Time: 5 minutes

Cooking Time: 5 minutes

Total Time: 10 minutes

– Banana Berry Smoothie –


1 banana

Handful of frozen mixed berries

1 tbsp maca powder

1 tsp cocoa power

1 tsp cocoa nibs


Equal amounts of soy milk and coconut water


Place all ingredients in a blender and blend until smooth.


Makes: 1-2 servings

Preparation Time: 3 minutes

Blending Time: 1-2 minutes

Total Time: 5 minutes

– Avocado on Toast –


1/2 avocado

Toasted bread

Tomato, snow peas, hummus etc. for garnish (optional)


1.  Mash avocado.

2. Spread avocado on toast and add garnish.


Makes: 1 serving – 2 slices of bread

Preparation Time: 5 minutes

Total Time: 5 minutes
