I basically live off smoothie bowls, they are so filling, healthy and delicious! I love to have them for breakfast, or anytime of day really! I’ve had to limit myself lately because it’s slightly cold to be eating a smoothie everyday in winter!
Below is my veery favourite smoothie bowl. I call it the ‘Vegan Berry Crunch.’
1 cup baby spinach
1 tablespoon chia seeds
1 cup soy milk (or any other dairy-free milk alternative)
1.5 cups frozen mixed berries
0.5 frozen banana (fresh banana is fine, but you will need to add ice to your smoothie).
* 1 cup = 250 grams
Some topping I like to use are:
- Sliced banana
- Sliced strawberries
- Chia seeds
- Coconut shavings
- Place the spinach, chia seeds, and milk in a blender or food processor and puree until smooth. (This will ensure that you don’t have any gross, chewy greens in your smoothie bowl.)
- Add the frozen mixed berries and banana to the blender. Puree, scraping down the sides of the blender periodically, until relatively smooth.
- Pour smoothie into a bowl and garnish with toppings of your choice. Serve immediately.
